Our Favourite Australia Day Pavlova Recipe

With Australia Day just around the corner, we cast our minds to the delicious traditional Australian sweet treats we will be enjoying at our dinner party, picnic celebration or day at home relaxing. Although we can’t deny our love for lamingtons and Anzac biscuits, can it really get any better than the heavenly combination of crispy-gooey meringue, freshly whipped cream and fresh fruit? Pavlova is our favourite desert for the summer time and we’ve given it a fun pink twist just to make it extra pretty. If you’re looking to impress this Australia Day or just to treat yourself to a desert at home then look no further.

The Meringue

The Meringue

When it comes to your meringue, you preference may lay one way or the other; soft and spongy meringue or a dry and crispy style. We think both are equally delicious but we will guide you to the perfect time to take them out of the oven and get that perfect bake. Depending on your Australia Day occasion, you can opt to make one large meringue (a great option for a dinner parties) or a range of mini nest (perfect for picnicking in the park or if you want to save some for later!).

6 egg whites (at room temperature)
2 cups caster sugar
1 tsp vanilla essence
1 tsp white wine vinegar
2 tsp cornflour
Pink food colouring paste or gel

1. Preheat the oven to 110 degrees Celsius.

2. Line a tray with baking paper and use a plate or mug (depending if you are making a large or small meringue) and use this as a stencil to mark your baking paper. This will allow you a good guideline to create the perfect shape and size.

3. In a large clean and dry glass bowl, use an electric mixer to beat the egg whites until soft peaks form.

4. Continue beating while gradually adding the caster sugar a quarter of a cup at a time. Continue this for at least 10 minutes until the mixture becomes glossy and thick. Once all the sugar is dissolved, beat in the vanilla essence, vinegar, food dye and cornflour at the end.

5. Spoon the mixture into a piping bag (making sure to remove any air pockets) or use a spatula to carefully create round nests into your stencils and cook in the oven for 80 minutes for a crisp meringue or slightly less time for a gooey meringue. Be sure to use a skewer to teste it is cooked just how you like.

6. Turn the oven off but leave the meringues in there to cool for at least another hour before removing.

The Whipped Cream Topping

300ml of thickened cream
1sp vanilla essence
Optional, ¼ cup pure icing sugar

1. With a electric beater whisk the ingredients together into soft peaks.

2. Spread on top of your meringue once it is completely cooled down.

The Final Touches

The Final Touches

This is where you can make the Pavlova your own and decorative is any way you like using your favourite fruits. Here are some of our top suggestions for a traditional Australian Pavlova:

1. Raspberries, blueberries and blackberries.

2. Fresh strawberries and shaved chocolate.

3. Fresh strawberries, kiwi fruit and passion fruit.

Keep your Pavlova refrigerated until it’s time to eat.
