What you're going to need:
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 large eggs eggs
- 1 cup heavy cream
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- Shortcrust pastry
- ¾ cup mozzarella cheese, shredded
- ¾ cup Cheddar cheese, shredded
Preheat oven to 190 degrees C.
Spray quiche tin and fit the shortcrust pastry to size.
Heat oil in a pan over medium high heat. Add onion and saute until soft, about 3 to 5 minutes.
In a large bowl, beat together eggs, cream, basil, oregano, salt and pepper.
Spoon the onions into the pie crust. Pour the egg mixture over the onions. Sprinkle shredded cheese on top.
Bake in preheated oven until a toothpick inserted into center of the quiche comes out clean, about 30 to 40 minutes. Let cool slightly before serving.
